Paleo Snack: Rosemary Almonds

I love almonds, so I decided to spice up my own this weekend. This recipe is really simple, total cooking time is 10 minutes.

(Note: while butter isn’t technically paleo according to a lot of people, I still use it)

  • Raw almonds
  • 1 tbsp ghee/butter or your favorite fat
  • Salt
  • Pepper
  • Rosemary
  • Red chili flakes (optional)

Heat the butter/ghee in a sauce pan and add enough almonds to layer the pan, but no more.

After coating the almonds in butter, add your rosemary, salt, pepper, and chili flakes. I didn’t list amounts on purpose – you should season them to your own liking. The chili pepper adds some spice if you’re into a little heat.

Toast them for 8-12 minutes, stirring regularly so they don’t burn. Keep the heat on low-medium throughout. Take them off the burner, let them cool on a plate and enjoy.

They taste pretty good the next day, but I recommend eating them while they’re hot. I tried adding a few walnuts in last night as well and that was also delicious.
