Justin & Amanda Learn to Cook: Meal 1 – Swordfish

This year, I’ve decided to learn how to cook a little bit better. My girlfriend Amanda and I cook pretty regularly – but by no means are we experts. So, we’ve decided to try something new. We’re going to cook new meals, that neither of us has made before. I’m sure some of them will be pretty rough, but hopefully the majority will turn out. I’ll document it here on the 52 Week Blog with pictures and ingredients.

This week we decided to try our hand at swordfish. One steak cost me $18 ($4.99 per 100g), so in my mind it had to taste pretty good. Here’s what we made:

-Swordfish in a caper-butter sauce

-Green beans with garlic and walnuts

Ingredients: 

  • 1 large swordfish steak
  • Garlic salt
  • Salt
  • Pepper
  • 1/4 cup butter
  • 1 tbsp olive oil
  • 2 cups green beans
  • 1/2 cup walnuts
  • 1/2 tbsp grain mustard
  • 3 cloves of garlic

Directions:

First, we seasoned the fish with salt, pepper, and garlic salt. Then we seared it in oil for 5 minutes before putting it in the oven for 10 at 400 degrees Fahrenheit.


Next, we cooked our beans in olive oil while toasting the walnuts simultaneously.


Then we made our sauce. Butter, capers, half a tablespoon of grain mustard, salt, pepper, and about 3 cloves of garlic.


Take the fish out, layer the beans, pour the sauce on top, and we’re all set.


Not bad for meal #1.
